Normally I just cheat and buy pre-cut chunks of butternut squash from Trader Joe's. But it costs a heck of a lot more than a whole one. But I have never been able to figure out how to cut it without killing myself. Thanks to the wonders of Google, I found this wonderful video that helped immensely. It was still hard to cut, and I'll probably go back to pre-cut, but this woman's video (found here) made me feel much more secure about my technique. Now I just have to do something about my knife technique in general, which a chef at a cooking class recently said frightened her. :)
OK, the one thing I have to say is, I want to know exactly what kind of knife she used. Must have been INCREDIBLY sharp. I have tried similar techniques and still found that getting through the butternut squash was almost like trying to cut through a rock -- Tracy

Tracy, I admittedly do not use sharp knives, and it was still *very* hard for me to cut; I felt like I got quite the upper body workout. However, following her instructions actually made me feel a lot more secure - it wasn't sliding all over the cutting board like normal. I hear rumor that some people actually sharpen their knives, and don't put them in the dishwasher to dull in the first place. ;)
